Ami will be 28-29, exponentially more confident (though still a little skittish when it comes to interpersonal affairs) and much more organized as one of the primary caregivers in the community. Her time with Unohana and Helen will have given her a substantial education in the medical realm and she will have established herself as a go-to for (primarily human) care. (Did I hear something about babies? Pediatrician, maybe?)

Mai will...well, depending on Zuko-mun's return (or not?) will probably be married/pregnant/something along those lines, and...I kinda have nothing. ATLA peeps wanna plot?

Shepard will be more grisly and battle-scarred, and will be yelling at the rest of you kids to get off her lawn.
